1 lb. boneless, skinless chicken breasts
1 large head of cauliflower, broken into florets
1/2 yellow onion, diced
1 tsp. sea salt, plus more to taste
1/2 tsp. ground black pepper
3 garlic cloves, minced
2 tbsp. fresh ginger, minced
2 tbsp. curry powder
1 cup low-sodium chicken broth
1 cup full fat coconut milk
1/2 cup frozen peas
2 tbsp. cilantro, chopped
DIRECTIONS
Add the chicken, cauliflower, garlic, ginger, curry powder, sea salt, black pepper, and onion to the slow cooker.
