Beet and Walnut Salad

This uncomplicated salad will have you looking forward to lunch! Nothing can beet it😉


Dressing:

2 tbsp. Mayonnaise

2 tbsp. Goat Cheese, softened

2 tbsp. Orange Juice

1/8 tsp. Dried Dillweed


Salad Ingredients:

6 cups Mixed salad greens

14 oz. Can of sliced beets, drained & quartered

1 cup Walnut Halves


Directions:

Combine all four dressing ingredients in a large measuring cup. It will make about 1/3 cup of dressing.


Combine all three salad ingredients in a large bowl or evenly distribute in small food prep containers. Add dressing and toss well. Makes four servings.


Protein Bonus: Add sliced oven cooked chicken or, if you're brave in the winter, BBQ some chicken to add on top!
